(1) Pursuit of Improvement in Cultivation Techniques
Not only is the "Koshu" variety of grape highly susceptible to the influence of the soil; but all grape vines are. Therefore, we need to find the best way to grow grapes through testing their cultivation with different types of soil aiming to produce the best quality, and in order to maximize the quality of every grain of grape, we also have to shift from sparse planting to dense planting and improve the grape bunch and grain picking method.

(2) Pursuit of Improvement in Wine Production Technology
Regarding the technique for maximizing the potential of "Koshu grapes", we have been successful in discovering the technique of brewing frozen fruit juice and long term fermentation.
However, if it becomes possible to harvest better quality grapes in future, we will have to develop a new production technique using Koshu grapes which can create the best body of the wine.

(3) The agricultural Situation in Japan @
In 2003, due to our efforts in appealing to the Japanese government we received approval for our plan for the special zone for wine industry promotion, and it became possible for people who are not in the agricultural business to own farm land for commercial purposes.
This was a big step forward in the wine production business of Katsunuma.
Before the approval of the special zone, the only way to purchase grapes for Koshu wine was by buying from grape growers who mainly grow table grapes. @
Recently, administrative initiatives including the special zone for wine industry promotion have enabled people who are not in the agricultural industry to own cultivated land. This has paved the way for wine makers to use their farm land to grow grape vines for wine production. @
With this deregulation, it became possible for us to freely perform all kinds of experiments and in order to pursue the attainment of the best quality of Koshu grapes.

(4) The Turn Around in the Agricultural Structure's Hierarchy @
Wine brewers are driving grape growing businesses.
In order to revitalize the local wine industry which has failed to establish its brand name and has declined under the old agricultural structure, and to establish a strong position in wine producing areas, we believe that it is necessary to harness the wisdom of the generations of people who have been growing grapes for 1,280 years.
We do not intend to just discard Katsunuma's longstanding customs and their negative effects, but rather to consider seriously how to maximize our predecessors' experience to produce internationally competitive wines and a bright future for the people involved in Katusuma's wine and grape industries.
